Camp cooking in Australia has evolved well beyond sausages on a stick. Modern camp kitchens can produce meals that rival restaurant quality with the right gear and techniques.
The Camp Kitchen Setup
A functional camp kitchen needs a two-burner camp stove for daily cooking, a camp oven for roasts and bread, a quality cutting board, one good sharp knife and a cleaning station.
Camp Oven Basics
The 9-quart 12-inch camp oven is the most versatile size for two to four people. Place coals under and on top of the lid – roughly one third underneath and two thirds on top for roasting.
Essential Camp Recipes
Camp Oven Damper
Mix 3 cups self-raising flour, 1 tsp salt, 1 cup milk and 2 tbsp butter. Form into a round, place in a lightly oiled camp oven. Cook for 35-40 minutes with coals top and bottom until golden.
One-Pot Campfire Curry
Brown 500g diced lamb, add diced onion, garlic and ginger. Add 2 tbsp curry paste, coconut cream and diced tomatoes. Simmer 40 minutes until lamb is tender. Serves four.
